This is a take on David Chang’s recipe for octopus vinaigrette. It is from his book Momofuko. A really good book in my opinion. You can use this to dressing fried chicken, spoon over fried eggs and rice or dress roasted veg.

Octo Vin

2 tbsp Ginger
1/2cup Apple Cider Vinegar
1/2cup Soy Sauce
1/4cup Light Olive Oil
1tbsp Honey
Chilli Flakes
